La tortilla de patatas[1] o tortilla española[2] es un plato tradicional de España y uno de los platos estrella de la cocina española. Se trata de una tortilla elaborada con huevos y patatas, que puede incluir cebolla. Se suele servir a temperatura ambiente como tapa.
La primera referencia a la tortilla en español se encuentra en un documento navarro, como un «memorial de la ratonera» anónimo dirigido a la corte de la región de Navarra en 1817. En él se explican las escasas condiciones de los agricultores navarros en contraste con los de Pamplona (la capital) y la Ribera (en el sur de Navarra). Después de enumerar los escasos alimentos que consumen los montañeses, sigue la siguiente cita «…dos o tres huevos en tortilla para 5 o 6 [personas] ya que nuestras mujeres saben hacerla grande y gruesa con menos huevos, mezclando patatas, pan rallado o lo que sea»[3].
Según la leyenda, durante el sitio de Bilbao, el general carlista Tomás de Zumalacárregui inventó la «tortilla de patatas» como plato fácil, rápido y nutritivo para satisfacer las carencias del ejército carlista. Aunque no se sabe si esto es cierto, parece que la tortilla empezó a extenderse durante las primeras guerras carlistas[4].
